The other night, little or nothing! You know what that felt like something good, but did not know what? Well, last night I also would have felt like something good ... but I do not .. The fridge is almost empty and it was raining outside, the house was so cold that seemed to February: it certainly does not improve the mood! A bit 'of sunshine, please! A white sand beach, two palms, a coconut .... coconut?
I have it! And yet a piece of pineapple. He's in the fridge, poor, rather, I would say! A quick foray into the freezer, and a little 'fantasy. I remember Martinique, sugar cane and rum, sun and sea, and hot ... hot ... hot!

onion fresh pineapple, 2 slices
coconut milk, 1 / 2 cans
dark rum, 1 cup


Preheat a thick-bottomed pan (I used the cast iron) and non-stick have the duck breast from the skin. Brown it well, drain off excess fat and turn it. Add the rum and flame. Cook 5-7 minutes, then add the onion cut into slices and fresh pineapple, cleaned and cut into cubes. Brown well, then sprinkle with coconut milk. Bake 5 more minutes. Season with salt and pepper. Serve hot.
